ABOUT Mexican Kebabs RECIPE

Grilled kebabs are a lovely treat as an appetizer in any party. It adds splendour. This recipe is adapted from Tarla Dalal's cookbook called 'Kebabs and Tikkis of India's most pioneering Chefs', a name to reckon with. Who does not know her, she is an individual who went on to become a brand which still lives on.

Ingredients Serving: 4

  1. Paneer cubes about 15 to 20
  2. Bell peppers red and green 1 each cut into big chunks
  3. Baby corn about 5 cut into halves
  4. Mushrooms about 10
  5. Onions about 1 to 2 cut into big pieces
  6. For the marinade:
  7. Cocoa powder 2 tsp
  8. Hung curd 3 tbsp
  9. Red chilli powder 1 tsp
  10. black pepper powder 1 tsp
  11. Garlic crushed 1 to 2 cloves.
  12. Salt 1 tsp
  13. Oregano 1 tsp
  14. Olive oil 2 tbsp
  15. For preparation and serving:
  16. Skewers, for grilling
  17. Sour cream 1/2 cup
  18. Few sprigs of spring onions

Instructions

  1. Mix all the ingredients listed under marinade and pop in the refrigerator for 4-5 hours.
  2. Mix all the vegetables and paneer in this marinade and set aside in the refrigerator.
  3. Grill these on a stove top grilling pan or in a microwave whichever is suitable for you. I used a microwave to grill. It took me around 20 mins.
  4. Serve them hot with sour cream and spring onions.
