Mutton Do Pyaza

Ingredients to make Mutton Do Pyaza

  • Mutton (with bones) - 750 grams
  • Yogurt - 500 grams
  • Onions (small sized) - 15
  • Almonds - 40 (soaked and peeled)
  • Garlic - 20 cloves
  • Red chillies - 10 (without seeds)
  • Black pepper - 15
  • Cloves - 5
  • Cardamom - 5
  • Cinnamon - 2 sticks
  • Ginger - 2 inch piece
  • Ghee - 2 tsp
  • Saffron strands - 2 pinches
  • Lemon juice - a few drops
  • Cooking oil - as required
  • Salt according to taste

How to make Mutton Do Pyaza

  1. Slice the onions evenly - neither too thick or thin. Keep aside. Next slice the garlic and ginger into long and thick slices. Keep aside. Make a fine paste of the almonds with a little yogurt. Set aside.
  2. Take a cooker, pour in oil, once heated add in the whole spices (cinnamon, cardamom, black pepper, cloves), 4 chilly pieces and few slices of onion. Stir fry till they they turn into a light golden colour. Do not over fry.
  3. Add in a few ginger garlic pieces, mutton pieces and fry for a few minutes. Also put in salt and half a glass of water. Let this cook for a few whistles till the meat is 80% cooked.
  4. Once pressure releases from the cooker, add the remaining ingredients-onion slices, red chilly pieces, ginger & garlic pieces, saffron strands, yogurt, almond yogurt paste, ghee, lemon juice, few spoons of cooking oil and remaining salt
  5. Cook this for 2 more whistles. Serve hot.

My Tip:

Add water only once to form the gravy. Cook the mutton depending on the tenderness of the meat. Saffron enhances the colour in this dish. Use bright red and spicy chillies. Beat the yogurt and add it to the gravy. This will result in a creamy texture otherwise the yogurt will give a cuddled look. Adjust the seasoning of the salt accordingly.
