Cilantro Lime Chicken and Rice

Ingredients to make Cilantro Lime Chicken and Rice

  • 1 ½ cups of Cooked White rice
  • 1 medium-sized onion, finely chopped
  • 6 cloves of Garlic, minced/finely chopped
  • 1 tsp of cumin powder
  • 1 tsp of Chili Powder
  • 150gms of Boneless chicken, cut into bite size pieces
  • 3 Tbsp of Vegetable oil
  • ½ cup of chicken Stock
  • Zest of ½ lime and lime Wedges
  • ½ cup of cilantro, chopped
  • Salt and pepper to taste

How to make Cilantro Lime Chicken and Rice

  1. In a bowl, mix together the chicken chunks with cumin powder, 1/2 of the chopped garlic, chili powder, salt and pepper. Set aside.
  2. Heat oil in a large skillet and add the marinated chicken. Cook for a few minutes, stirring in between.
  3. Add onion and remaining garlic and saute until the onions become translucent, say 7 mins.
  4. Add chicken stock and cook down so that it is reduced by half.
  5. Add the rice and and mix well. a good stir and season with salt and pepper to taste.
  6. Add lime zest and cilantro and stir it in. Squeeze a little lime juice over the top when ready to serve.

My Tip:

Make sure you use a fork to mix the rice with the gravy/sauce. This will help remain the rice grains separate and not mashed.
