Egg less Vanilla Tea Cake

Ingredients to make Egg less Vanilla Tea Cake

  • 1 and 1/3 cups all-purpose flour
  • 3/4-1 cup castor sugar )depending on preference sweetness)
  • 1 Cup Thick Yogurt
  • 1 and 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup Oil
  • 1 teaspoon vanilla extract / essence
  • Handful of roasted and chopped nuts of your choice

How to make Egg less Vanilla Tea Cake

  1. Preheat oven to 200 degrees C. Line, grease and dust one 6 ½ inches round cake pan.
  2. Beat yogurt till smooth in a bowl, add baking powder and soda. Mix well. Keep aside for 3 mins for the mixture to start bubbling.
  3. Add oil, sugar and vanilla essence and mix till uniformly incorporated. Add flour in parts. Mix gently till just combined.
  4. Pour the batter into the prepared pan. Level with a spoon, sprinkle the chopped nuts evenly on top.
  5. Bake at 200 degrees C for 10 minutes. Reduce the temperature to 175 degrees and bake for 40 – 45 mins or till a toothpick inserted in the center comes out clean.
  6. Cool the cake in the tin for 10 minutes. Loosen the edges by running a knife along the sides and remove the cake from the pan.
  7. Cool in the rack. Slice and serve next day.

My Tip:

Beat the yogurt till its smooth. Mix the dry and wet ingredients till just combined. Do not overmix.

Hello Deepa, so happy that you baked the cake and loved it. If you want to double the recipes, just double the ingredients. But Add curd to get the right consistency of the batter. Start with 1 1/2 cup curd. Add more to adjust the consistency.

I used store bought yogurt. If the yogurt is runny, then remove the water as much as you can. Runny yogurt gives a cracked top.
