Poornam Boorelu recipe is typical one that is followed in almost all houses in Andhra Pradesh.This a special occasion and festival dish specially during Durga Navratri.They offered these deep fried sweets to goddess Durga,becouse her fevourite and she would be pleased with anyone who offer her these during the 10 auspicious days.

Ingredients Serving: 4

  1. 3/4 cup rice
  2. 1/4 cup Urad dal
  3. Pinch of salt
  4. 1-2 tsp rice flour
  5. For stuffing,1/2 cup Chana dal
  6. 3/4 cup water
  7. 1/2 granulated jaggery or palm sugar
  8. 1 tsp cardamom powder
  9. 2 tsp Desi Ghee
  10. Oil for Deep frying
  11. 2 tsp desicated coconut

Instructions

  1. Soak rice and urad dal seperataly in enough water for atleast 4 hours
  2. Cook Chana dal with water till press between two fingers and it will break easily.
  3. In a bowl melt jaggery with little amount of water to remove impurities 15-20 ml water is sufficient.
  4. Now mash the dal with masher,smooth dal is good for perfect stuffing.
  5. Now heat a pan add ghee add mash dal roast it till plesent smell is come now add jaggery and desicated coconut and begin to cook till the water is evaporate and mixture looks dry
  6. Add cardamom powder and mix well and switch of gas and keep aside to till cool,when it cool make lemon size ball of it.
  7. Now grind urad dal with salt and water and make smooth paste of it,add rice into and little amount of water and grind it and make smooth paste(consistency like dosa better)
  8. If mixture is running add rice flour in it to make perfect consistency.
  9. Heat oil in deep fry pan take one ball coated with rice better and drop on hot oil till golden brown in colour,fry all balls like this.
  10. Once cool fry them again for a min to stay crisp for longer time
