Mini Dark Chocolate Cheesecakes

Ingredients to make Mini Dark Chocolate Cheesecakes

  • Biscuit base
  • 150 g digestive biscuits
  • 30 g cocoa powder
  • 20 g organic jaggery granules
  • 50 g butter, chopped, chilled
  • Dark Chocolate Filling
  • 200 g dark couverture chocolate melted
  • 150 g cream cheese
  • 150 g mascarpone
  • 30 g cocoa powder
  • 3 eggs
  • 1 tsp pure vanilla extract
  • 90 g organic jaggery granules
  • Topping
  • Fresh strawberries
  • Dark chocolate flakes
  • Fresh mint
  • Cocoa powder

How to make Mini Dark Chocolate Cheesecakes

  1. Biscuit base
  2. Whiz the biscuits, brown sugar and cocoa in food processor until you get a fine meal.
  3. Add butter,whiz again to mix. Press into individual 2" baking rings {or 1 8″ loose bottom tin}
  4. Chill in the freezer while you get the filling ready, and the oven preheats.
  5. Dark Chocolate Filling
  6. Preheat oven to 160C.
  7. Place all ingredients of the filling in bowl of food processor, and blend well to mix, 1-2 minutes on medium speed.
  8. Pour into crust, and bake for 30 minutes hour. Leave to cool in the oven, then cover and chill for 4-6 hours, better overnight.
  9. Topping
  10. Gently push out from ring molds/baking tin, and plate.
  11. Dust with cocoa powder, top with diced strawberries and dark chocolate flakes. Garnish with mint. Serve cold, or leave at room temperature for 30 minutes before serving.

My Tip:

Use seasonal fruit to top, or whipped cream, salted butter caramel etc. Or add a dash of orange liqueur and top with whipped mascarpone.
