Choco Zucchini muffins ( Eggless -butterless)

Ingredients to make Choco Zucchini muffins ( Eggless -butterless)

  • Two cups of whole wheat flour
  • One cup of grated zucchini
  • One third cup unsweetened cocoa powder
  • Half tsp cinnamon powder
  • Half tsp baking soda
  • One tsp baking powder
  • Half cup vegetable oil
  • One cup packed, unrefined sugar/ brown sugar

How to make Choco Zucchini muffins ( Eggless -butterless)

  1. Preheat the oven at 180 degrees.
  2. Lay out muffin cups or line your muffins trays.
  3. Wash and grate the zucchini. Squeeze out a bit of water from it.
  4. Measure out one cup of the drier zucchini grated.
  5. To the mixing bowl add the zucchini, oil and sugar. Mix well..till the sugar is nearly dissolved. Sift together the flour, the cocoa powder, cinnamon, baking powder and baking soda. This is your dry mix.
  6. In a separate bowl whisk together the oil and sugar to form a bit frothy.
  7. Add the dry mix to the wet mix and gently fold in to the wet mixture.
  8. Scoop out to fill about half of each muffin cups.
  9. Bake at 180 for 20minutes.

My Tip:

Top it with chocolate ganache.
