Ingredients to make Eggless butterless walnut muffins

  • maida - 1 cup
  • wheat flour - 1/2 Cup
  • oil - 1/2 cup
  • curd - 1 cup
  • sugar - 3/4 cup (white and brown sugar combo)
  • Baking powder - 1 1/4 tsp
  • baking soda- 1/2tsp
  • Vanila Essence - 1 tsp
  • walnuts - 1/2 a cup

How to make Eggless butterless walnut muffins

  1. Mix sugar and curd. Beat till sugar dissolves.
  2. Preheat oven to 200 °c
  3. Add the baking powder and baking soda. Mix
  4. It will turn frothy
  5. Add the oil and Vanila essence. Mix well
  6. Now add the sieved flours two to three tbsps at a time and mix gently using the cut and fold method
  7. Add the walnuts dusted with some flour. Mix
  8. Line the muffin tray with muffin liners and spoon the batter upto 3/4 of the muffin liner.
  9. Reduce the temperature to 180°c and bake for 25 mins approx.
  10. Check with skewer for doneness.

My Tip:

Do not over mix.just be gentle using the cut and fold method.
