Palak,Methi aur Curry Leaves ki Puri (Green Puri)

Ingredients to make Palak,Methi aur Curry Leaves ki Puri (Green Puri)

  • wheat flour 1 cup
  • Washed & Chopped palak Leaves 1/2 cup
  • washed & Chopped methi Leaves 1/2 cup
  • curry leaves 7
  • Ajwain 1/2 tsp
  • green chillies 2
  • salt to taste
  • red chilli powder 1/4 tsp
  • Milk 2 tbsp
  • oil for frying

How to make Palak,Methi aur Curry Leaves ki Puri (Green Puri)

  1. Wash curry leaves.
  2. In a mixer puree palak leaves, methi leaves, curry leaves & green chillies together. Transfer to the bowl and keep aside.
  3. Combine wheat flour, green puree, salt, red chilli powder,milk and ajwain in another wide mixing bowl. Knead to make a thick dough. Cover it and keep aside for 20 mins.
  4. Heat oil in a deep frying pan over the med.- high flame.
  5. Meanwhile divide the dough into small equal sized balls.
  6. Now take a oil test add a pinch of dough if it touches the bottom and comes back on the surface of oil then the oil is perfect for frying the puri.
  7. Take a small ball dip it in a oil & flatten it into a small disc with the help of rolling pin.
  8. Put that disc into the hot oil and wait for it to puff up and flip it on the other side to cook till it turns golden brown. Now drain the excess oil from the puri and transfer it on the kitchen towel.
  9. Continue the deep frying process for the other balls.
  10. Serve hot puri with curd, pickle or alloo curry

My Tip:

I use curry leaves because it gives little crunchy feeling in the puri and makes it little crisp also. At my home everyone loves to have crisp puries.
