Egg and Sprout kothu Parotta.

Ingredients to make Egg and Sprout kothu Parotta.

  • Parottas 4 no.
  • eggs 4
  • Sprouts of your choice 1 katori
  • onion 2 (big)
  • tomatoes 2
  • Green chilli 2
  • coriander powder 1 tsp
  • Red chilli powder 1 tsp ( to taste )
  • Garam masaala to taste
  • salt to taste
  • Chat masala 1 tsp
  • oil 2 tbsp
  • asafoetida 1/4 Tsp
  • mustard seeds 1tsp
  • Zeera 1/2 tsp
  • garlic crushed 1 tsp
  • ginger grated 1/2 tsp
  • sesame seeds 1 tsp
  • Curry patta few
  • Lime juice of 1/2 lemon
  • salt to taste
  • onion for Omlet 1
  • Salt and chilli for Omlet to taste
  • butter 1 tsp ( for omlets).

How to make Egg and Sprout kothu Parotta.

  1. Saute sprouts in a pan by adding 1 tsp oil. After it gets cooked transfer on a nonstick tawa and saute on medium flame
  2. Saute till it becomes crisp. Transfer in a plate and keep aside.
  3. Till that heat rest oil. In a kadhai. Add Asafoetida and Mustard Seeds. After it crackles add finely chopped onions. Saute and add all masala one by one.( except chat masala ).
  4. After it is sauted well add finely chopped Tomatoes and saute well.
  5. Prepare Omlets (2) by adding chopped onion salt and chilli.
  6. Make bite sized pieces of parottas.
  7. Your Onion Tomato mixture is ready till now. Add paratha and mix well.
  8. Adjust salt and masala. Cut Omlet in small bites and add. Mix well and add lime juice to the mixture
  9. Saute for few minutes and now add crispy Sprouts. Add Chat masala Turn the gas off.
  10. Garnish with coriander leaves And serve with onion raita/ tomato chutney / seasonal butter milk./ Zeera Chaash.
  11. I prefer zeera Chaash with it.

My Tip:

You can just crack the eggs in a pan instead of Omlet. You can add chicken too. If you want to make it vege than can add cooked Rajma too. Can add finely chopped veges too. To give it more crunch you can add Bhujia sev too.
