Ingredients to make Bharwa Baingan, Aalu Aur Pyaaj Ki Sabji

  • Small brinjals-4
  • Small potatoes-4
  • Onions-4
  • Gram flour-1/2 cup
  • Coriander powder-2 tsp
  • Cumin powder-2 tsp
  • Fennel seed powder-2 tsp
  • Turmeric-1 tsp
  • Chilli powder-2 tsp
  • Aamchur-1 tsp
  • Tomatoe-1 (finely chopped)
  • Oil-2 tbsp
  • Coriander for garnishing

How to make Bharwa Baingan, Aalu Aur Pyaaj Ki Sabji

  1. Wash and peel the potatoes and onions.
  2. Roast gram flour in a pan till nice aroma comes. Add all spices and salt and roast for another minute and then put off the gas.
  3. Add chopped tomatoes in this filling masala.Mix everything.
  4. Now cut brinjals horizontally after removing their tops, also the potatoes and onions.Stuff the prepared filling in brinjals
  5. Take oil in cooker and add cumin seeds and asafoetida.
  6. Gently arrange all filled vegetables and pour 1 cup water.Sprinkle remaining filling masala on top.If you want thin gravy, you can add more water.The gravy thickens because of gram flour.
  7. Close the lid and cook for 3 whistles.
  8. And serve this yummy hot sabji with phulkas or daal chawal.
