ABOUT Shahi tukra RECIPE

Shahi tukra is a royal exotic bread pudding made with fried bread in ghee, evaporated milk with dry fruits and nuts, saffron and cardomoms. Shahi means royal and tukra means piece. It can be traced back to mughal period where it was served chilled in the royal kings palace.

Ingredients Serving: 4

  1. Bread- 6
  2. Milk- 1 litre
  3. Sugar- 1 cup
  4. Saffron- few strands
  5. Raisins- to garnish
  6. Chopped amonds, pistachio
  7. Cardamom- 3 ( powdered)
  8. Vanilla Essence
  9. Yellow colour a pinch

Instructions

  1. Boil milk and add sugar in very slow flame and add keep stirring .
  2. Scape off the cream and layers stuck to the sides of the vessel and mix it with the milk.
  3. Continue till it thickens and switch off the flame. Our rabdi is ready.
  4. Now cut bread diagonally. We get 12 pieces.
  5. To cut off the extra calories, i roasted bread slices in non stick pan.
  6. In stead of dipping into sugar syrup, i added litter sugar to bread slices in non stick pan. It gives sweetness and also caramelizes the bread to golden coloue.
  7. Dry roast dry fruits and nuts and keep ready to garnish.
  8. Arrange these fried bread triangles and pour rabdi over the bread slices and garnish with roasted nuts.
  9. Keep it in refrigerator till we are ready to serve
  10. Enjoy chilled dessert and get ready to receive compliments.
