ABOUT Sondesh /Sandesh RECIPE

Sandesh is one of the most popular sweets made during Durga Pooja. Basically, Sandesh is a sweet moist fudge made from cottage cheese.

Ingredients Serving: 4

  1. Paneer/cottage cheese 250 grams (home made or ready made )
  2. Sugar 50 grams (approx 1/2 cup, powdered)
  3. Milk powder 1/2 cup
  4. Any essence of choice (rose or kewra)
  5. 1 Pinch food colour orange or yellow (or, use kesar strands)
  6. 1 tsp Slivered almonds and pistachios
  7. 4 cardamoms (seeds crushed)

Instructions

  1. Squeeze home made paneer and if using ready-made grate it and mash it
  2. Heat a non- stick pan add paneer and cook till it thickens
  3. Add sugar, milk powder, food colour with elaichi powder. Let it cook till the mixture leaves the sides of the pan
  4. Keep stirring while cooking. Cook on low heat it will take hardly 5 to 8 minutes. Turn off the flame add essence too
  5. Let the mixture cool completely
  6. The mixture might be grainy. Mash and knead till it becomes really smooth.
  7. Grease your palm with ghee or oil to make small balls. Press in the middle with your thumb
  8. Garnish with nuts. Serve .
