Ingredients to make Kheertua

  • For spongy paneer discs -
  • Milk low fat 750 ml
  • Vinegar or lemon juice 1 tbsp
  • For rabri -
  • 1 litre + 1 cup milk
  • Pistachios chopped 4 -5
  • Saffron strands few
  • Sugar 1/4 cup
  • Cardamom powder 1 pinch

How to make Kheertua

  1. Boil milk in a pan
  2. Add lemon juice or vinegar
  3. Milk will start curdling
  4. Switch off the gas
  5. Stir slowly
  6. Now strain chena in a muslin or cheese cloth over a colander , wash chena under running tap water
  7. Now tie the cloth and hang for 30 mins - 45 mins
  8. Knead well for 10 minutes or until it does not stick to the plate or your hand
  9. Make small equal size balls
  10. Now give them oblong shape
  11. Press lightly
  12. Boil 1 litre milk in a large heavy pan on medium heat
  13. Stir and scrape the sides and also push the malai layer one side
  14. Also add broken pistachios
  15. Add some saffron strands , reserve some for garnishing
  16. Now add oblong paneer or chena discs
  17. Boil them in the milk for 15 - 20 mins in medium heat
  18. Stir gently without breaking paneer pieces
  19. Now switch off the gas
  20. Garnish with pistachios and saffron strands
  21. Serve chilled
