About Kheertua

A very rich , unique dessert from my hometown Tripura . Normally it is not prepared at home , they are available in sweet shops , it is one of my favourite sweet from Tripura. It is very similar to Chhanar Payesh with little difference , the cottage cheese or chana discs are of oblong shape .

Ingredients to make Kheertua

  • For spongy paneer discs -
  • Milk low fat 750 ml
  • Vinegar or lemon juice 1 tbsp
  • For rabri -
  • 1 litre + 1 cup milk
  • Pistachios chopped 4 -5
  • Saffron strands few
  • Sugar 1/4 cup
  • Cardamom powder 1 pinch

How to make Kheertua

  1. Boil milk in a pan
  2. Add lemon juice or vinegar
  3. Milk will start curdling
  4. Switch off the gas
  5. Stir slowly
  6. Now strain chena in a muslin or cheese cloth over a colander , wash chena under running tap water
  7. Now tie the cloth and hang for 30 mins - 45 mins
  8. Knead well for 10 minutes or until it does not stick to the plate or your hand
  9. Make small equal size balls
  10. Now give them oblong shape
  11. Press lightly
  12. Keep aside
  13. Boil 1 lit milk in a large heavy pan in medium heat
  14. Every 4 mins stir it and scrap the sides also push the malai layer one side
  15. When the milk is half, add sugar
  16. Also add broken pistachios
  17. Add some saffron strands , reserve some for garnishing
  18. Now add oblong paneer or chena discs
  19. Boil them in the milk for 15 - 20 mins in medium heat
  20. Stir gently without breaking paneer pieces
  21. Now switch off the gas
  22. Garnish with pistachios and saffron strands
  23. Serve chilled
