Alsi Khajur Cake / Flexseed Dates Cake

Ingredients to make Alsi Khajur Cake / Flexseed Dates Cake

  • Wheat flour 1 cup (you can take maida)
  • Powdered sugar 1/2 cup
  • Flaxseeds 1 tbsp (powdered and soaked in 2 tbsp milk)
  • Dates or khajur 10-12 (chopped and soaked in 1/2 cup milk)
  • Baking powder 1/2 tsp
  • Baking soda 1/4 tsp
  • Salt a pinch
  • Oil or butter 1/2 cup
  • Milk 1/2 cup
  • Chopped nuts (walnuts, almonds) 2 tbsp

How to make Alsi Khajur Cake / Flexseed Dates Cake

  1. Sieve wheat flour, baking powder, baking soda and salt thrice. Keep aside.
  2. Grind soaked dates into a smooth paste.
  3. Whisk butter or oil and sugar until it becomes light and fluffy. Add khajur paste and soaked flaxseed powder and whisk again. Add flour mixture in 2-3 batches.
  4. Same time add milk little by little.
  5. Mix everything well without any lump. Add more milk if needed.
  6. Add vanilla essence and fold well. Add chopped nuts and mix them.
  7. Pour batter into a greased cake tin. Tap the tin to avoid air bubbles.
  8. Bake for 30-45 minutes in preheated oven at 180 degree centigrade.
  9. Check after 30-45 minutes with a toothpick comes out clean.
  10. Cool the cake on the wire rack. Cut into the desired shape. Serve with tea or coffee.
