ABOUT Stuffed kulcha chana RECIPE

Kulcha Chana, a Delhi based street food, is quite popular among the people. The spicy and lemony Chana with the butter roasted Kulcha is a famous evening snack among Delhites. The Chana or the masala matar is a semi thick chickpea gravy flavored with a lot of spices like red chili powder, green chili, garam masala etc., which gives it a very spicy taste. Often lemon juice is also added to the Chana to make it more tasteful. The Kulcha is roasted in butter, which totally compliments the Chana. Since now a days most people are in a hurry of everything and don’t even have proper time to eat. So, to easy out their problem, a very innovative way has evolved to serve the Chana Kulcha. The Kulcha is divided into 2 parts and the Chana is spread on one of the sides along with .freshly cut tomatoes and onions. The Stuffed Chana Kulcha is an ideal choice for food on the go and that too so delicious.

Ingredients Serving: 3

  1. Readymade kulchas -6
  2. Boiled black gram-1 cup
  3. tomato puree -1/2 cup
  4. Onion diced-1
  5. Garlic paste-1 tsp
  6. Green chilli chopped-2
  7. Coriander leaves chopped-1tbsp
  8. Tomato diced-1
  9. Chaat masala-1 tsp
  10. Black salt -1/2 tsp
  11. Red chilli powder-1 tsp
  12. Garam masala -1/2 tsp
  13. Roasted cumin powder-1 tsp
  14. Lemon juice-1 tsp
  15. Tamarind pulp- 1 tsp
  16. Salt- to taste
  17. Oil-1tbsp

Instructions

  1. Heat 2 tsp oil in a pan, add garlic paste to it and cook till the raw smell goes.
  2. Add tomato purée, cook for couple of minutes.
  3. Add salt ,boiled black gram,red chilli powder and garam masala, cook till mixture becomes dry and masala coats grams properly. Keep this mixture aside to cool down.
  4. Meanwhile take a flat pan/griddle/taw a and use remaining oil to heat kulchas from both sides.
  5. Now add black salt, chaat masala,roasted cumin powder,diced onion, diced tomato ,chopped green chilli chopped coriander leaves and lemon juice to the mixture.
  6. Give a small cut on the top of all kulchas and fill this mixture in it.
