Ingredients to make Breakfast Rolls

  • Multigrain buns - 6
  • Eggs - 6
  • Salami - 4 slices
  • Mushrooms - 5
  • Spring onions - 2
  • Capsicum - 1/2
  • Mixed herbs - a little
  • Chilly flakes - a little
  • Cheese - 8 to 10 tbsp
  • Butter - 3 tbsp
  • Olive oil - 1to 2 tbsp
  • Salt - according to taste

How to make Breakfast Rolls

  1. Preheat oven to 165 degrees. Scoop out soft portion of bread rolls to form a shell. Place these on baking tray lined with baking paper.
  2. In a cooking vessel add olive oil, fry capsicum and mushroom slices on high flame till they are soft. Season with little salt. Set aside. In the same pan stir fry fine slices of salami.Set aside.
  3. Apply butter to the bun shells. Fill each bun with one tbsp of mushroom and capsicum mixture. Break one egg in each bun.
  4. Bake at 165 degrees for 15 to 20 minutes.
My Tip: The filling and garnishing can be of your choice. Softer buns are preferable as they tend to get crisp after baking.
