ABOUT Plantain Vada Pav RECIPE

Plantain or raw banana are healthy substitute for potatoes.

Ingredients Serving: 6

  1. Raw banana - 4
  2. Chopped coriander leaves - 1/2 cup
  3. Chopped green chillies - 6
  4. Salt - as per taste
  5. Black salt - 1/2 teaspoon
  6. Bun (pav) - 6
  7. Gram flour (besan) - 1 cup
  8. Red Chilli Powder - 1/2 teaspoon
  9. Oil - for deep fry.
  10. For seasoning:-
  11. Hing - 1/2 teaspoon
  12. Black mustard seeds - 1 teaspoon
  13. Urad Dal - 1 teaspoon
  14. Cooking oil - 1 tablespoon
  15. For Green chutney:-
  16. Coriander Leaves - 1 Sprig
  17. Green Chillies - 2-3
  18. Cumin seeds - 1 teaspoon
  19. Chaat Masala - 1 teaspoon
  20. Dry mango powder - 1/2 teaspoon

Instructions

  1. Cut the raw bananas into two and pressure cook them until 3 whistles. Shut the gas and let pressure release on its own.
  2. Meanwhile blend together the ingredients for the green chutney with enough water to make a thick chutney. keep aside.
  3. Now take out the raw bananas and remove the peel.
  4. Add green chillies, chopped coriander leaves, salt and black salt and mash it till they mix well.
  5. Heat oil in a pan for seasoning.
  6. Add in the urad dal. After it turns pink add in the mustard seeds.
  7. Once the mustard seeds crackle add hing to it.
  8. In not less than 3 seconds, pour the seasoned oil to the raw banana mix. Mix well again. let it cool.
  9. Make round balls out of it once it has cooled.
  10. Prepare a thick batter out of gram flour with water, salt and red chilli powder.
  11. Dip the balls in the batter and fry them until it turns golden.
  12. Cut the buns or pav horizontally. Apply coriander chutney to the insides and place the vada right in the middle.
  13. Serve with with tomato ketchup or sweet date chutney.
