Ingredients Serving: 4

  1. 2 medium potatoes
  2. 3 small tomatoes
  3. 1tsp jeera
  4. 1tsp hing
  5. 1tsp rai
  6. 1tsp saunf
  7. 1tsp Methi Dana
  8. 1tsp dhaniya dana
  9. 3-4red chilli dry
  10. 1tbsp Oil
  11. 1tbsp corriender powder
  12. 1tbsp red chillie powder
  13. 1tsp haldi
  14. 1tbsp Aamchoor
  15. 2tbsp kasuri Methi(known as pan methi in marwadi)
  16. 1tsp ghee
  17. Salt to taste

Instructions

  1. Peel and dice potatoes also chop tomatoes finely, hear oil in the pan once hot add jeera, hing, red chilli dry, saunf, methidana, dhaniya Dana and rai then add tomatoes
  2. Saute till tomatoes leave oil add potatoes and saute if required add warm water little, let it cook and after a while add chilli powder, coriander powder, haldi and salt to taste and let it cook
  3. Once almost done add Aamchoor and mix well add Kasuri Methi and mix well
  4. Once done add ghee just before serving and your jodhpuri Aloo Pan Methi is ready. Serve with roti, rice or with parathas
