ABOUT Khaare Sewaiyan with Keema... RECIPE

Khaari in Urdu means salted and this vermicelli preparation is a specialty of Hyderabad. It is made as a breakfast mostly on festive mornings. It is made with keema, yogurt and spices. It is absolutely an awesome treat to your taste buds. This particular vermicelli is sold in every big and small bazaars of Hyderabad city just like the other sewaiyan called chutte ke sewaiyan used for the Sheerkhurma, another most popular sweet dish of this Nawabi city. Can also add any of your favorite veggies into it as a variation, thus making it even more healthy.

Ingredients Serving: 6

  1. Khaare sewaiyan or vermicelli 400 gm
  2. Lamb mince mutton 1/2 kg
  3. Chilli powder 1 tbsp
  4. Green chillies chopped 2
  5. Tomatoes chopped 2
  6. Salt 1 tbsp or more
  7. Turmeric 1/2 tsp
  8. Garam masala 1 tbsp
  9. Onions sliced thinly 2
  10. Yogurt 250 gm
  11. Coriander leaves finely chopped a handful
  12. Ghee or oil 3 tbsp

Instructions

  1. Roast the vermicelli until golden brown and keep aside.
  2. In a wide mouthed pot or handi, heat the ghee.
  3. Saute the onions until done.
  4. Add the ginger garlic paste along with the chopped tomatoes.
  5. Cover and cook until the tomatoes are soft.
  6. Now add the green chillies, mince mutton, along with the spices and the salt.
  7. Add the well beaten yogurt into it.
  8. Cover and cook it on low flame until the ghee starts separating.
  9. After the mince mutton is done, add the water and bring it to a rolling boil.
  10. Now add in the roasted vermicelli.
  11. Cover and cook until done.
  12. Garnish with coriander and serve hot.
