Black eyed beans are called lobia in India. I made a quick and healthy salad. You can have this as a healthy lunch or serve with crackers as a snack.

Ingredients Serving: 3

  1. Cooked or canned black eyed beans: 1 cup
  2. Red onion (diced): 1/4 cup
  3. Tomato/ cherry tomato: 1/3 cup
  4. Cucumber (diced): 1/3 cup
  5. Olive oil (extra virgin): 3 tbsp
  6. Apple cider vinegar: 1 tbsp
  7. Garlic (minced): 1 tsp
  8. Parsley: 1 tsp
  9. Honey: 1/2 tbsp
  10. Chili flakes: 1-2 tsp
  11. Black pepper powder to taste
  12. Salt to taste
  13. Feta cheese (optional)
  14. Crackers or bread to serve

Instructions

  1. If you are using canned black eyed beans, then drain and keep the beans aside.
  2. If you are using dried beans, then the beans are need to be soaked in enough water for at-least 8 hrs or over night. After proper soaking drain and wash the beans and cook. This cooked beans can be used in various ways.
  3. In a bowl add olive oil, vinegar, honey, chili flakes, salt, black pepper, parsley, garlic, mix well. Add cooked beans and mix well.
  4. Sprinkle feta cheese on top and serve immediately with crackers or multi grain bread.
