Tuver Seeng Ni Kachori

Ingredients to make Tuver Seeng Ni Kachori

  • 2 cup - Wheat flour
  • 1 & a 1/2 cup - Shelled tuver sing
  • 3 to 4 - green chillies
  • 4 tbsp - Oil for dough
  • 2 tbsp - Oil for tempering the filling
  • 2 tbsp - Sugar
  • 1 tbsp - Jeera/cumin seeds
  • 2 tsp - Mustard seeds
  • Water as needed
  • Oil to fry
  • Salt to taste

How to make Tuver Seeng Ni Kachori

  1. Mix the flour, salt and oil to form a dough. Knead to a Poori like consistency. Keep it in an air tight container.
  2. In a mixer jar, add the green chillies and make it into a paste. Add the tuver sing, little at a time and grind it into a coarse paste.
  3. Heat 2 tbsp oil in a pan, add the cumin and mustard seeds. Add the tuver sing and green chilly mix. Let it cook for 5 mins on a low-medium heat.
  4. Add sugar and let it mix well. Once the mix starts to turn to a darker shade of green, turn off the gas and let it cool to a room temperature.
  5. Now make about 25-30 balls out of the dough. Roll them out a little and add about 1 to 1 & a 1/2 tsp of the mixture. Close the ends and secure properly.
  6. Heat oil in another pan for deep frying. Fry about 5-6 at a time and let it get a nice and golden from all sides.
My Tip: Do not fry them at high flame at any time. A medium heat is what is best for them.
