Ingredients to make Mutton Khichda

  • 500 gms - mutton boneless
  • 300 gms - khichda wheat which are pounded
  • 100 gms - rice
  • 100 gms - mixed dal (urad yellow moong dal tuwar)
  • 3 onions diced
  • 4 to5 large onion slices (fried golden brown for garnish)
  • 10 to 12 green chillies
  • 2 tbsp - garam masala powder
  • 2 tbsp - ginger finely chopped
  • 1 tbsp - jeera
  • 6 garlic pod + 4 tbsp for tempering
  • 2 tbsp of oil
  • 3 to 4 tbsp - home made ghee
  • Salt as per taste

How to make Mutton Khichda

  1. Soak wheat, rice and dal for 3 to 4 hrs. In a cooker add mutton, wheat, rice, dal, onion, chilli, salt, garlic pod, salt and ginger, let it cook till 3 whistles switch off gas. Do not open it, leave everything to soak for 6 hrs.
  2. Open the cooker mix it well add water if required and bring it to a boil again for 4 whistles and open the cooker. Check to see if the wheat is cooked well. (In case if it needs more cooking then cook it more approx 2 whistles)
  3. When cooled, mash it with a hand blender till smooth. Khichda will be ready. Its just needs tempering now.
  4. Take oil in a pan when hot add chopped garlic, jeera and saute till golden brown. Switch off the gas, add garam masala and pour it on the khichda.
  5. Sprinkle golden fried onions, sprinkle garam masala, mint leaves and hot ghee and enjoy.
My Tip: If u don't get pounded wheat then use oats and barley ratio 50:50.
