Ingredients to make Aam Panna/ Raw Mango cooler

  • 3 medium sized raw mangoes
  • Handful of fresh mint/ pudina leaves
  • 1 tsp black pepper crushed or powdered (optional)
  • 2 tsp black salt
  • 1 tsp chaat masala
  • Powdered sugar– double the amount of the mango pulp… add more for more sweetness

How to make Aam Panna/ Raw Mango cooler

  1. Rinse the raw mangoes in water.
  2. Roast the raw mango for 2-3 minutes in gas on medium high flame.
  3. Then bake for 25-30 minutes at 180 degree C in a pre heated oven until they become completely soft .
  4. Once cooled, peel the skin and take out the pulp.
  5. Now add the pulp into blender/ food processor and now add fresh mint leaves, black salt, black pepper powder, chaat masala and sugar and blend until it becomes smooth.
  6. Add water according to your desired thickens. But I like a little think aam panna.
  7. Store the aam panna in an air tight bottle in refrigerator.
  8. Serve chilled along with some fresh mint leaves.

My Tip:

1.Roasting the mangoes on gas gives a beautiful burnt smell. 2.If you don’t have oven you can steam the raw mangoes in pressure cooker for 2-3 whistles until they become completely soft . 3.The sugar can be adjusted depending on the sourness of the mangoes. 4. You can also steam the mangoes or cook these in a pan remember they have to become soft, so that the peel and the pulp comes out easily.
