Ingredients to make Summer Cooler

  • 4 tsp sweet Basil seeds
  • 2 cups cubed Watermelon
  • 1 small Red tomato chopped.
  • Steamed half a beetroot
  • 1 freshly squeezed Blood orange
  • 1 tbsp extra virgin Olive oil
  • 2 tsp freshly squeezed Lemon
  • Pinch of Cayenne pepper/Red Mirch powder - for the kick ( optional )
  • 1 tsp grounded Fennel
  • 1 tsp Balsamic vinegar
  • 6-7 sprigs of fresh Mint leaves
  • Rock salt to taste
  • 1 tsp freshly grated ginger
  • 1 tbsp Finely chopped cucumber - for the crunch

How to make Summer Cooler

  1. Soak sweet basil seeds in 4 tbsp warm water. Keep aside.It will swell up in 10 mins.
  2. Mean while except sweet basil seeds, grind everything together in a blender until smooth.
  3. Taste test and make adjustments if needed.
  4. Sieve it if you wish
  5. Chill for few hours if desired or enjoy immediately.
  6. Scoop some soaked basil seeds in the glasses .. Then slowly pour soup on top.Just before serving,add some chopped cucumber
My Tip: I have used seedless watermelon. Adjust sweetness to your taste.
