Mexico in a Bowl - Mexican Chili Bean

Ingredients to make Mexico in a Bowl - Mexican Chili Bean

  • 1 to 1 and 1/2 cup mixed beans like kidney beans, black beans, Pinto beans, Adzuki beans, etc
  • 2 teaspoon oil
  • 1 medium onion, chopped
  • 3-4 garlic cloves, chopped
  • 1 large carrot, chopped
  • 1 stalk of celery, chopped
  • 1 small zucchini, chopped
  • 1/2 cup chopped capsicum. May use different coloured ones
  • 3-4 button mushrooms, chopped
  • 2 tomatoes, chopped
  • 1/2 cup tomato paste
  • 1 tablespoon dried oregano
  • 2-3 teaspoons red chilli powder or as per taste
  • 2 teaspoon cumin powder
  • salt as per taste
  • 2 teaspoon curry powder
  • 2 teaspoon ground pepper
  • Juice of 1/2 lemon

How to make Mexico in a Bowl - Mexican Chili Bean

  1. Soak the beans for 10-12 hours. Discard the water
  2. Heat oil in a casserole and add onion, garlic, carrot, celery, capsicum. Once they soften a little, add the capsicum and mushrooms.
  3. Add the tomatoes, tomato paste, beans and all the spices.
  4. Add water, cover, and cook on low to medium till the beans are done. This will take about 2 hours. Stir in between. Adjust water and seasonings. Lastly, add the lemon juice.
  5. Serve with carbohydrate of choice. I have used sweet potato. Top with the chili beans. Garnish with corn kernels, spring onions, tomato, coriander sprigs, avocado, cheddar cheese.

My Tip:

The carbohydrate and toppings used here were what I had available on that day. Works well with rice, quinoa, mashed potato as well.
