Easy Tomato Pickle

Ingredients to make Easy Tomato Pickle

  • Ripe tomatoes 1 kg
  • Red chilli powder 3-4 tbsp
  • Salt 1 tbsp
  • Garlic cloves, chopped 5-6
  • oil 1 tbsp
  • For Dry Roasting : Fenugreek seeds 1 tbsp
  • Black mustard seeds 1 tbsp
  • cumin seeds 1 tbsp
  • For The Tempering : Dry red chilies 4
  • Cumin seeds 1 tbsp
  • Curry leaves A few
  • Oil 1/2 cup

How to make Easy Tomato Pickle

  1. Wash the tomatoes, pat dry and chop fine.
  2. In a pot, heat the oil and add the chopped garlic. After half a minute of sauteing, add the tomatoes. Cover and cook on high flame.
  3. Keep checking and stirring in between. After about 10 mins, the tomatoes would have become tender.
  4. Switch off the flame and add the red chilli powder and the salt. Mix well and blend it.
  5. Dry roast the ingredients listed for just a minute and add powder them. Add the powder to the blended pickle.
  6. Keep the tempering ready for mixing but not before cooling it.
  7. Add the tempering, that has been brought to the room temperature, to the pickle and mix well. Oil can be adjusted accordingly. If needed, more smoked oil can be added to it after a few days if desired but it should be brought to room temperature before mixing.
  8. This pickle stays fresh up to 20 days in the refrigerator. Serve with meals.
My Tip: Always use a clean dry spoon. Also oil should not be hot while adding to it.
