Fudge Cake

Ingredients to make Fudge Cake

  • 1 cup all-purpose flour
  • ½ cup butter (100 grams) melted
  • 1/4 cup + 2 tablespoons unsweetened cocoa powder
  • 1 and 1/4 cup sugar (powdered)
  • 2 eggs
  • ½ teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup hot water ( not boiling)
  • 1 cup warm Ganache

How to make Fudge Cake

  1. Preheat oven to 180 degrees C. Grease and line one 8 inch round cake pan.
  2. Sift cocoa powder. Whisk together flour, cocoa powder, baking soda and salt.
  3. In another bowl mix melted butter and sugar. Add eggs and vanilla essence.
  4. Add flour mix and stir till just moist. Pour hot water over the mix and stir till you get an even consistency and the batter gets smooth. Pour the batter into the prepared pan.
  5. Bake for 40 -45 minutes or till a toothpick inserted in the center comes out clean.
  6. Remove the cake from the oven and remove from the pan after 10 minutes. Cool in the rack.
  7. While the cake cools, prepare ganache. Heat 200 grams dark chocolate in a double boiler. Add 5 tablespoons cream. Stir constantly till chocolate melts. Take off the heat and stir briskly till it becomes smooth and shiny.
  8. Pour warm ganache over the cake. Spread ganache with a spatula. Let it set for an hour. Slice and Enjoy!

My Tip:

Pour warm ganache over the cake. It will become soft and fudgy.
