Ingredients to make Aaloo Methi Paalak

  • Spinach greens chopped - 4-5 cups
  • Fenugreek leaves (methi leaves) chopped - 1 cup
  • Red chilli powder - 1 tsp
  • Ginger garlic paste - 1 tbsp
  • Onions large, sliced - 2
  • Oil - 2-3 tbsp
  • Turmeric - 1/2 tsp
  • Green chillies, slit - 2-3 (optional)
  • Crushed coriander seeds - 1 tsp

How to make Aaloo Methi Paalak

  1. Wash and chop the spinach and fenugreek leaves. Wash and peel the potatoes and cut as desired.
  2. In a pan, heat oil and add ginger garlic paste. Saute it for a few seconds and then add the sliced onions.Saute them for a minute or little more and then add the potatoes along with the other ingredients as well. It is better if you deep fry the potato cubes for 3 to 4 mins and then add.
  3. Now add both the greens and cook on high flame for a minute till the water dried from the spinach. Cover and cook on medium flame till done. Keep stirring in-between.
My Tip: Adding methi leaves to this classic dish gives it an all new dimension.
