Cauliflower Pickle

Ingredients to make Cauliflower Pickle

  • One - medium size, cauliflower
  • 6 to 7 - Garlic cloves
  • Mustard and cumin seeds for tempering
  • Split black gram - 2 tbs
  • Curry leaves - 7-8
  • 1- 11/2 tbsp - Mustard seed powder / mustard paste
  • 1/2 tbsp - Fenugreek seeds
  • 1 tsp - Cumin powder
  • Red chilli powder as per taste
  • Salt for taste
  • 1 tsp - coriander powder
  • Asoefetida - 1/4 tsp
  • Lime juice - 1 tsp
  • Cooking oil

How to make Cauliflower Pickle

  1. First dice and clean the cauliflower florets. Add them in hot boiled water with salt for 30 secs and remove.
  2. Pat dry the florets completely by spreading on cloth.
  3. Take a wide pan and add little more oil. You need to add little more oil while preparing pickle to increase its span as oil acts as good preservative. Saute these florets for just 3 minutes. Don't over cook them. They have to be crunchy.
  4. Dry roast mustard seeds, cumin seeds and fenugreek seeds on low flame and powder them in blender.
  5. Switch off the stove and half cool them. When oil is still little hot add all the spices, coriander powder and the blended powders (mustard, fenugreek, cumin powder), red chilli powder and turmeric powder. You can add all ingredients as per my measurement or little increase or decrease quantity as per your choice and taste,
  6. Add salt and mix the florets properly with all spices. Take another pan and add oil. when is heated add cumin,mustard seeds and split black gram.
  7. Add garlic slices and curry leaves. Transfer this tadka to cauliflower spice mixture and mix everything,
  8. Serve this instant pickle with rice.
