Gur Aam Pickle

Ingredients to make Gur Aam Pickle

  • 1 kg - Raw mango
  • 750 gm - jaggery
  • 250 gm - sugar
  • 1tsp - cumin
  • 1tsp - saunf
  • 1 tsp - coriander
  • 3tsp - Bengali five spices (Panch Phoron)
  • 6/7 - Dried Red Chilies
  • 1/2 tsp - ginger julienne
  • salt to taste
  • turmeric - 1/4 tsp
  • Juice of 1 lemon

How to make Gur Aam Pickle

  1. Cut the raw mangoes longitudinally with skin. Add salt and turmeric and let the mango pieces dry in the sun till all moisture evaporates.
  2. Heat jaggery in a pan and make a syrup of it. Add ginger and sun dried mangoes. Let it simmer. Add lemon juice and sugar.
  3. Mix it thoroughly and till the jaggery syrup comes to two string consistency.
  4. Dry roast the spices and grind them. Add to the mixture and stir. Once done, turn off the gas and let it cool. Spoon it in glass jars and and eat when desired.

My Tip:

Keep the jar in the sun for few days so that it will taste more delicious.
