Ingredients to make Meatloaf

  • 350g minced beef (or you can use mince mutton)
  • 350g minced pork meat (or you can use mince chicken)
  • 4 slices of bread crumbled
  • 2 eggs
  • 3/4 cup Ketchup
  • 1 cup Carrot finely chopped
  • 1 Onion finely chopped
  • 1 Celery stalk finely chopped
  • 3 Cloves garlic minced
  • 2 tbsp Parsley leaves finely chopped
  • 2 tbsp Mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Sugar
  • 4 tbsp olive oil
  • Salt and pepper to taste

How to make Meatloaf

  1. Preheat oven to 180 degree C with a baking rack in the oven.
  2. Heat oil in a heavy base skillet. Add chopped onions, carrots, parsley, garlic, celery and bread crumbs. Sprinkle with salt and pepper. Add the worcestershire sauce and 1/3 ketchup. Cook for 5-6 mins until carrots are tender. Take it off the heat.
  3. Add minced beef, pork, bread crumbs, eggs to the veggies and using hands or a spatula, mix all the ingredients until the mixture is even.
  4. Transfer mixture in loaf pan or baking pan.
  5. Stir remaining ketchup and brown sugar until its smooth. Brush onto the meat loaf mixture.
  6. Bake for about 1 hour. Remove from oven and let it sit for 15 mins.
  7. After the meat loaf has cooled at room temperature, take it out from the loaf pan.
  8. Cut thick slices and serve with bread, sandwiches, etc.
