Ingredients to make mango semolina cake

  • Semolina 2 cups
  • Curd 1/2 cup
  • Sugar 3/4 cup
  • baking powder 11/4 tsp
  • Baking soda 1/2 tsp
  • Oil 1/2 cup
  • Mango puree 1 cup
  • Salt a pinch
  • Milk 1/4 cup

How to make mango semolina cake

  1. Pour the semolina into a bowl.
  2. Add baking powder to the above.
  3. Now also add the baking soda to the semolina.
  4. add the sugar as well to the above.
  5. Whisk it for 2 minutes until everything is combined.
  6. Pour some curd into another bowl.
  7. Add the oil and the mango puree into the curd.
  8. whisk this mixture too for 3-4 minutes until the mixture is little pasty and combined.
  9. Add the dry ingredients into the wet mixture.
  10. Mix until everything comes together.
  11. Pour the mango cake batter into a greased mould and bake in a preheated oven at 180 degree celsius for 35 minutes.
  12. Insert a skewer into the cake, if it comes out clean, let it cool on a wire rack, if not then bake it for another 5 minutes or until done.
  13. once the cake is cold enough, demould it and cut into desired pieces. serve them with some chopped mangoes.
  14. I have used heart shape cookie cutter to get the shape as shown in the pciture.
