Pan roasted chicken

Ingredients to make Pan roasted chicken

  • 400 g chicken( with bone or boneless)cut in medium sized pieces.
  • 3 tbsp carom seeds( ajwain)
  • 1 tbsp white or olive oil
  • 4 tbsp onion paste
  • 1 tsp Garlic paste
  • 2 tbsp ginger paste
  • 100 gm curd( dahi) ( unsweetened)
  • Salt according to taste.

How to make Pan roasted chicken

  1. Take the chicken in a big bowl and wash thoroughly until completely cleaned. Add the curd, carom seed, salt and marinate the chicken . Refrigerate the chicken for 1 hr 45 mins to 2 hrs.
  2. Take out the chicken from the refrigerator and keep outside for sometime till it becomes a little warm.
  3. Heat the oil in a non stick frying pan. Add the chicken pieces greased with a small amount of the mixture to the pan. Cover the pan and cook for 40 mins on a low flame.
  4. Open the lid after 20 mins and flip the chicken pieces. Cook until chicken pieces are soft. If you want to, you can bake the chicken in a microwave.
  5. Preheat the oven at 250 degree Celcius. Brush oil in a microwave safe dish and cook the chicken pieces in the microwave oven for 40 mins . After 20 mins brush some oil and flip the pieces and cook for rest of the 20 mins. Bake until chicken pieces are soft.
  6. Note:-1. Adjust the cooking time for a few mins more or else depending upon the quality of the chicken. 2. The chicken pieces may look a little black or burnt . Its absolutely fine and this tastes even better.
My Tip: Serve with lime and pudina chutney.
