Ingredients Serving: 8

  1. sugar 1 cup
  2. Butter 2 tbsp
  3. Flour 2 tbsp
  4. cornstarch 3 tbsp
  5. Water 1.5 cups
  6. lemon juice - 2 lemon and zest
  7. 4 egg whites and yolks
  8. pie crust pre baked [store bought]

Instructions

  1. pre-heat oven at 175 degree celsius.
  2. To Make Lemon Filling , mix together 1 cup sugar, flour, cornstarch, and salt. add water, lemon juice and lemon zest. let the mixture comes to a boil. Then add butter. This will give the lemon curd. Pour this lemon curd onto the pre-baked crust.
  3. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges of the crust.
  4. Bake the pie for 10-15 minutes, in the preheated oven at 175 degree celsius.
