Muringa Poovu Thoran (Drumstick Flower Stir Fry with Coconut)

Ingredients to make Muringa Poovu Thoran (Drumstick Flower Stir Fry with Coconut)

  • 1 cup drumstick flowers
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon chilly powder
  • Salt to taste
  • Few drops of water
  • For grinding :-
  • 1/2 cup grated Coconut
  • 2 shallots, sliced
  • 1/2 teaspoon cumin seeds
  • For tempering :-
  • 1/2 teaspoon mustard seeds
  • 2 dry red chillies, broken
  • 1 sprig curry leaves
  • 1 tablespoon coconut oil

How to make Muringa Poovu Thoran (Drumstick Flower Stir Fry with Coconut)

  1. Separate the drumstick flowers from stalks. Place them in a bowl of turmeric water. Drain after 15 minutes.
  2. Grind grated coconut, sliced shallots and cumin seeds to a coarse mixture. One or two pulses would be enough.
  3. Heat oil in a pan over medium heat. Splutter mustard seeds. Add the dry red chillies and curry leaves. Wait for the dry red chillies to change colour to brown.
  4. Simmer and add the drum stick flowers and salt. Sprinkle little water and cook covered for about 5 minutes.
  5. Now open the lid and add the coconut mixture. Cook covered for another 3 minutes.
  6. Remove the lid and mix the thoran well. Continue cooking stirring in between. Switch off after 2-3 minutes.
My Tip: You can store the drumstick flowers in refrigerator up to a week.
