Bhindi Chilli Fry

Ingredients to make Bhindi Chilli Fry

  • bhindi 400 gms
  • onion 2 big , sliced
  • potato 1 cubed optional
  • Red capsicum 1
  • Green chilli chopped 4_5
  • curry leaves a handful
  • garlic pods chopped 4
  • ginger crushed 1/2 tsp
  • Curry powder 1 tsp
  • turmeric powder 1/2 tsp
  • chilli powder 1/4 tsp
  • salt
  • asafoetida a pinch
  • coriander leaves chopped for garnishing

How to make Bhindi Chilli Fry

  1. Wash and cut ladies finger in 2 pieces or in rings
  2. Cut potatoes in thin pieces
  3. Cut onions in thin slices
  4. Heat oil , add black mustard seeds , when spluttered add curry leaves
  5. Next add potatoes ,stir fry them for 3_4 mins
  6. Add turmeric powder , curry powder , chilli powder and salt
  7. Add chopped green chilli
  8. Saute for 2_3 mins
  9. Now add bhindi
  10. Cover and cook for 7_8 mins
  11. Stir in between , don't burn them
  12. Now add chopped tomato and 3_4 tsp water
  13. Cover and cook for 3_4 mins
  14. Add capsicum , again cover and cook for 3_4 mins
  15. Stir and mix carefully
  16. Add hing
  17. Check for salt
  18. Garnish with fried chilli , curry leaves and fresh coriander leaves
  19. Serve hot with rice or roti

My Tip:

If you want you can fry bhindi separately , and add it later , to retain the crispiness of the bhindi, in the curry.
