Ingredients to make Aloo Dal

  • Potatoes 3 medium
  • Tomatoes 3 medium
  • Ginger 1 inch piece
  • Garlic 4-5 cloves
  • Green Chillies 2 ( chillies can be added according to taste )
  • Turmeric Powder/Haldi 1/4 tsp
  • Salt to taste
  • Oil/ghee 1 tbsp
  • Cumin Seeds/Jeera 1 tsp
  • Dry Red Chillies 1-2
  • Water 2 cups (quantity can be altered as per desired consistency )
  • chopped coriander leaves 1 tbsp

How to make Aloo Dal

  1. Wash and halve potatoes, wash the tomatoes and cut into chunks. Wash and peel ginger, garlic, chop roughly. Also chop the green chillies roughly.
  2. Put all of the above in a pressure cooker, add 2 cups water, salt and turmeric powder. Pressure cook for 3-4 whistles. The potatoes should turn mushy. Let the mixture cool, you can add cold water or ice cubes to hasten the cooling.
  3. Now blend the mixture in a mixer or a hand blender to a smooth puree. You can sieve the puree if you want, I do not as all the fibre is thus lost.
  4. Adjust the consistency, add water if required. Adjust salt. Bring to a boil, lower the flame while we prepare the tempering.
  5. Heat oil/ghee, add cumin seeds, when they splutter add dry red chillies. Stir and pour over the aloo dal. Sprinkle chopped coriander and cover the vessel for five minutes. Serve with rice/bread of your choice.

My Tip: Lime juice can be added for that extra tang. 1 tsp of the same should do the trick. I sometimes add 2 tbsp fresh, whipped curd to the aloo dal and cook on sim for 2-3 minutes. Bhindi/Okra and Tendli/Ivy Gourd stir fried with regular masalas, roti/rice make this a yummy meal. This preparation goes very well with Gujarati masala poori.
