Ingredients to make Mango Kesar Pista Malai Matka Kulfi

  • 1 litre full-fat milk
  • 1 cup thick mango puree
  • 3/4 cup condensed milk /sugar
  • 4 tbsp pistachios soaked in warm water
  • 6-7 green cardamom
  • 1/2 tsp Saffron soaked in 1 tbsp milk
  • 1 tbsp Almonds sliced
  • 1 pinch black salt

How to make Mango Kesar Pista Malai Matka Kulfi

  1. Soak Kesar in milk
  2. Soak Pista in warm water blanch it and slice it.
  3. Deseed cardamom seeds crush it.
  4. Now heat a heavy bottom pan
  5. Add full-fat milk. Boil it till half in quantity.add condensed milk or sugar. mix well
  6. Add Kesar milk, almonds, pistachios sliced, and cardamom seeds, and milk powder..Mix well.
  7. Let it boil for another 2 minutes
  8. When milk is reduced in grainy in texture add mango puree.Mix well.Boil it another 2 minutes to absorb the taste of mango.
  9. Now add black salt mix well.Switch off the flame.
  10. Let cool the kulfi mixture
  11. In kulfi mould adds some Pista and Kesar at bottom
  12. Pour kulfi mixture over it.Cover it.set it in the fridge for 6-7 hours or till overnight
  13. After set kulfi in freezer.. Take it out. Un mould it serves it chill mango puree.
  14. Kesar Pista Mango Malai Kulfi ready to eat..Enjoy..

My Tip:

Instead of condensed milk use raw sugar, brown sugar. Milk powder is optional it is used for grainy texture.
