ABOUT Mutton Roganjosh RECIPE

Mutton Roganjosh is an aromatic and flavourful dish from Kashmiri cuisine.Rogan josh is originally from Persian cuisine.Here mutton cooked in a brown onion, yoghurt based flavourful gravy.Kashmiri Hindu brahmins are not using any onion and garlic in their any recipe even in Roganjosh also.

Ingredients Serving: 4

  1. Mutton- 1 kg
  2. Curd - 1 cup
  3. Onion- 2 , thinly sliced
  4. Ginger+garlic paste - 2 tsp
  5. Ginger powder - 1tsp
  6. Turmeric powder- 1tsp
  7. Kashmiri chilli powder- 2tbsp
  8. Coriander powder- 1 1/2tsp
  9. Salt as required
  10. Roganjosh Masala:
  11. cumin seeds- 1tsp
  12. Fennel seeds- 2tsp
  13. Nutmeg/ Jaifol- 1/4 tsp
  14. Mace / Jaitri - 1/4 tsp
  15. Cinnamon- 1 /2-inch stick
  16. Green cardamom- 4
  17. Black cardamom- 1
  18. Cloves - 5-6

Instructions

  1. Wash mutton properly. Then pressure cook mutton with 1 bay leaf, 4 cloves,2 green cardamoms, 1/2 Tsp salt and 1 cup water .wait for 2-3 whistle Then simmer it for 10 mins.
  2. Take out mutton from cooker and reserve mutton stock separately.
  3. Now take all the Roganjosh masala in a grinder and grind to a powder, add a little water and grind to a smooth paste.
  4. Heat a pan with 2 tbsp oil..add sliced onion.fry till well brown..let it little cool.then blend until smooth.
  5. Take a bowl. Add yoghurt, brown onion paste, Roganjosh masala paste, Kashmiri chilli powder, coriander powder, and ginger powder..mix well everything..keep aside.
  6. Now heat a pan with 3 tbsp oil.add boiled mutton and turmeric powder. Mix well.fry mutton on low medium heat till turns a little brown.
  7. Then add ginger garlic paste and stir it for a minute.
  8. Then add yoghurt masala mixture..salt to taste,1/2 tsp sugar...give a nice stir to mix mutton with yoghurt mixture
  9. Stirring it for 4-5 mins or till the oil leaves the side of the pan.then pours the mutton stock.mix well to the mutton.
  10. Once it starts bubbling..turn down flame for 6-7 mins or till the oil floats on top.
  11. Check seasoning...keep gravy as per your desire consistency...sprinkle some coriander leaves.
  12. Serve Mutton Roganjosh with naan, paratha, steam rice or whatever you like.
