ABOUT Onion Kheer RECIPE

Surprise surprise na... Yes onion kheer very delicious and no smell. Something very unique and different. Recipe courtsey : Bejaya Sinha i have modified a bit by making it more healthier by not using sugar. I am in love with the taste of dates jaggery in all kheer prerpations. So have added dates jaggery in this.

Ingredients Serving: 2

  1. 1/2 cup chopped onion.. I have used white onions as it's less pungent
  2. 1 cup water.
  3. 1/2 ltr milk..
  4. 2tsp ghee/clarified butter
  5. Jasmine/mogra flowers 6
  6. 2 tbsp milk powder or khoya
  7. Dates jaggery to taste
  8. Kevda water 1 tsp
  9. Rose petals few
  10. Saffron strands few soaked in warm milk
  11. Cardamon powder a pinch
  12. 2 tbsp chopped mix nuts
  13. 4 raisins
  14. Rose water half tsp
  15. Dried rose petals and nuts to garniah

Instructions

  1. Take 1/2 cup chopped onion.. I have used white onion as it's less pungent
  2. Add 1 cup water.. Cover and cook for 10 minutes
  3. Strain it
  4. Again add water and cook for 5 minutes more.. ..
  5. Strain it again.
  6. Keep the blanched thick onion pulp aside
  7. Now boil milk separately
  8. In a separate pan put ghee and add boiled onions pulp
  9. Saute till colour changes to light brown
  10. Add boiled milk to this
  11. Add soaked saffron and jasmine flowers. Cook for 5minutes..
  12. Add 2 tbsp milk powder. Mix well. Add kevada water
  13. Add rose petals
  14. You can make potli of jasmine and rose flower for infusion of flavours.
  15. Boil it for a while
  16. At this stage u can remove potli
  17. Now add a pinch of cardamom powder, nuts and soaked raisins.
  18. Cook till it becomes thick
  19. Add chopped dates jaggery nd rose water in the end
  20. Garnish with chopped nuts and dried rose petals
  21. Serve hot
