Ingredients to make Roasted Peppers Pasta (with Sambar masala)

  • 1 cup Pasta
  • 1 big red Bell pepper
  • 1 medium sized tomato
  • 1 medium onion
  • 1/4 tsp coriander powder
  • 1/5 tsp red Chili powder
  • 1 tsp sugar
  • 1/4 tsp Sambar masala
  • 2 tsp rice bran Oil
  • salt

How to make Roasted Peppers Pasta (with Sambar masala)

  1. On low flame roast the peppers until skin turns black. Leave it to cool. Gently peel the skin and chop the flesh by discarding the seeds. Pulse this in food processor/mixier jar and set aside.
  2. Slice the onions and chop the tomatoes. Set aside.
  3. Add water to a saucepan and bring it to rolling boil. Season with salt and add pasta. Cook till al-dente by stirring the pasta in between on medium flame. Drain (preserve 1 cup for sauce).
  4. Heat 2 tbsp. of oil in a skillet and fry onions till transparent by adding chili powder and coriander power.
  5. Now add in chopped tomatoes and cook till soft. Add pureed pepper along with sambar masala. Stir and cook for 2 minutes.
  6. Add in paste and cook for another 2-3 minutes or until sauce turns thick and pasta is well coated. If you feel the mixture is dry then add saved pasta water. Serve hot or cold as per taste.
