Caramelised onions and peas rice ( bhuge chawal )

Ingredients to make Caramelised onions and peas rice ( bhuge chawal )

  • 1 cup rice
  • 3 medium onions
  • 1/2 cup peas
  • 2 tbsp ghee
  • 2 Bay Leaves
  • 1 inch cinnamon piece
  • 2 Green Cardamoms
  • 2 piece clove
  • 1/2 tsp red chilli powder
  • Salt to taste
  • Water , as required

How to make Caramelised onions and peas rice ( bhuge chawal )

  1. Wash and soak the rice for 10 mins.
  2. Slice the onions and keep aside.
  3. In a pressure cooker, put ghee and add all the whole spices - bay leaves, cinnamon, cardamoms, cloves and then the onions.
  4. When the onions become brown, add the peas and saute for a minute.
  5. Add the rice, red chilli powder and salt to taste.
  6. Mix well and add the desired amount of water to cook the rice.
  7. Close the pressure cooker and cook till 2 whistles.
  8. Let the steam go off on its own and then open the cooker.
  9. Serve hot with your choice of vegetable or simply with fried potatoes and papad.
My Tip: If you feel onion browning too much or on verge of burning, add water to stop the process instantly.
