About Baigan Bharta Recipe

Spicy Mashed Eggplant which is a favorite dish among the North Indians.

Baigan Bharta

Ingredients to make Baigan Bharta

  • 250gms Eggplant
  • 1 onion finely chopped
  • 2-3 green chillies (slit)
  • 1/2tsp turmeric powder
  • 1/2tsp cumin powder
  • 1/2tsp red chilli powder
  • 2 garlic cloves
  • 2tbsp oil
  • salt to taste
  • coriander leaves

How to make Baigan Bharta

  1. Roast eggplants on hot ash or on a griddle. Remove the skin and mash.
  2. Heat oil to smoking in a wok and fry the onions until golden brown. Add the mashed eggplant, turmeric, cumin powder, chilli powder, salt and garlic and saute.
  3. Add chopped onions, green chillies. Mix well.
  4. Serve hot garnished with chopped coriander leaves.

My Tip:

You can also add a little bit of curd as per your preference.

Hi Ritu, We can also boil the eggplants in pressure cooker or microwave for people who do not like the roast taste .
