Milk cake or Milk Fudge

Ingredients to make Milk cake or Milk Fudge

  • Milk-2 litres
  • Alum-1/4 teaspoon
  • Sugar-100 grams
  • Grated alm0nds- 7-8
  • Cardamom powder-1/4 teaspoon
  • Chirongi-1/2 teaspoon
  • Saffron 4-5 (soak in milk)
  • For Cream Decoration:
  • Condensed milk-1 cup
  • Cream-1 cup
  • Food colour-as per choice

How to make Milk cake or Milk Fudge

  1. Bring the milk to boil in a large thick bottomed pan on high heat.
  2. Add sugar and continue to cook.
  3. Add alum when milk has reduced to 1/4.
  4. Stir continuously till the milk becomes grainy, and begins to leave the sides of the pan.
  5. Turn off the gas. Leave milk cake in pan for 10- 15 minutes so the color from bottom side turns in to dark brown.
  6. Transfer the mixture in to greased dish, garnish almonds, cardamon powder. Cover dish with lid and then cover the dish with thick towel .
  7. Set aside for 2-3 hours. Put this in a warm place and then turn the milk cake out onto a serving dish. Cut into squares and enjoy.

My Tip:

One can add cashew nut powder.

As far as i know alum is a chemical compound used for preserving...Please clarify if it is the same that you have mentioned in the recipe.
