The three types of milk coupled with ghee give this halwa a rich, creamy texture and flavor, much like what you get from adding khoya/mava.

Ghiya/Lauki/Dudhi Halwa-Indian Dessert made of Bottlegourd

Ingredients to make Ghiya/Lauki/Dudhi Halwa-Indian Dessert made of Bottlegourd

  • 2 cups Lauki/Ghiya grated and squeezed
  • 2 tbsp ghee
  • 1/4 tsp Cardamom/elaichi powder
  • 1 1/2 cups milk(I used 2%, you can use whole, 1% or skim)
  • 1/2 cup Milk Powder, I used Nido brand
  • 1/4 cup condensed milk

How to make Ghiya/Lauki/Dudhi Halwa-Indian Dessert made of Bottlegourd

  1. In heavy bottom pan,heat ghee and add cardamom/elaichi powder to it.
  2. Add the squeezed Ghiya/Lauki and cook till the water dries up.
  3. Add 1 1/2 cups milk and cook lauki/ghiya till the milk dries and lauki has cooked.
  4. Add Milk powder and continue to stir and cook till.
  5. When it starts coming together and leaving sides, add the condensed milk.
  6. Cook for just a few minutes till thick and it all comes together.
My Tip: The use of ghee along with the three types of milk,elevates the humble lauki halwa to a higher level! Plus you are getting a whole serving of vegetable while eating dessert!
