Richness of walnuts and flavour of mango in a swiss roll.

Ingredients Serving: 8

  1. For mango preserve
  2. Mango pulp - 2 cup
  3. Sugar - 1 cup
  4. For sponge cake
  5. Maida - 1/2 cup
  6. Powdered sugar- 1/2 cup
  7. Egg - 4 nos
  8. Milk powder- 1 tbsp
  9. Baking powder- 1/2 tsp
  10. Mix fruits essence- 1 tsp
  11. Honey- 1 tbsp
  12. Finely Chopped walnuts- 2 tbsp

Instructions

  1. Heat mango pulp with sugar and cook.
  2. Cook until this reaches a thick consistency. Keep aside for later use.
  3. Mix baking powder, milk powder with Maida and sieve them.
  4. Beat egg white with sugar and make it fluffy. Add yolk and Maida.. Add the essence.
  5. Pour in a baking tray and bake in preheated oven for 15 minutes at 180 degree Celsius.
  6. After baking the sponge cake ,take it out from the oven and roll with kitchen towel and keep it aside to cool down.
  7. After cooling the sponge cake , open the roll and spread mango preserve ( jam) all over on the cake and again roll it tightly.
  8. Mix 1 tbsp honey with 1 tbsp mango preserve and brush it on the roll.
  9. Roll the cake on the finely chopped walnuts.
  10. Slice the sponge cake .
  11. Mango swiss roll is ready to be served.
