ABOUT Mango cheesecake trifle RECIPE

No-bake, easy and quick dessert which has deliciously amazing taste with biscuit crumb crust, creamy mango cheesecake and whipped cream layering.

Ingredients Serving: 3

  1. Digestive biscuit (crumb) 2 and 1/2 cup
  2. Butter (melted) 2 tablespoon
  3. Ripe mango (medium) 2 number
  4. Cream cheese 1 cup
  5. Heavy whipping cream 1/2 cup
  6. powdered sugar 1/2 cup
  7. Mango small chunks 1/3 cup

Instructions

  1. Put the digestive biscuits into a zip lock bag, crush with a rolling pin and then stir through the melted butter evenly.
  2. Alternatively, use a food processor to pulse the biscuits to a breadcrumb structure, pour in the melted butter and combine well.
  3. Spoon 2 tablespoon of mixture into the serving glass (preferable trifle glass) and press lightly with a spoon.
  4. Place in refrigerator to set the crust.
  5. Puree the mango flesh in a food processor until a smooth consistency.
  6. Take the whipping cream in a large bowl.
  7. Whisk the cream using electric whisk for about 7-8 minutes in the highest speed or until soft peaks arise.
  8. Don’t overdo the beating as the cream might turn into butter.
  9. Keep in refrigerator till needed.
  10. In another bowl whisk cream cheese, powdered sugar till smooth and creamy.
  11. Add in the mango puree and mix till well combined with the cream cheese.
  12. Take out the whipped cream from refrigerator.
  13. Fold half of the whipped cream with the mango cream cheese mixture slowly till well incorporated.
  14. Then fill one piping bag fitted with star nozzle with the cheese cake mixture, another piping bag fitted with star nozzle with rest whipped cream.
  15. Take out the serving glass from refrigerator, pipe a swirl of cheesecake on top of biscuit crumbs, then a swirl of whipped cream on top of cheesecake.
  16. Put some small mango chunks on top of whipped cream.
  17. Again make a layer of biscuit crumbs on top of mango chunks, then cheesecake and finally whipped cream.
  18. Chill overnight or at least for 4-5 hours.
  19. While serving, top the serving glass with some freshly cut small mango chunks and serve !
