Ingredients Serving: 8

  1.  For the dough    (1cup=250ml)      
  2. 2 cups All Purpose Flour (Maida)
  3.  1 tsp carrom seeds (ajwain)
  4. 5 tbsp oil
  5. Salt to taste
  6. Water as required
  7. For stuffing
  8. 3 tsp oil
  9. 1 tsp Cumin Seeds (Jeera)
  10. 5 potatoes boiled, peeled
  11. 1 inch ginger chopped
  12. 2 green chillies chopped
  13. 1/2 tsp Dried mango powder (amchoor)
  14. 1/2 tsp garam masala powder
  15. Coriander leaves
  16. Salt to taste.

Instructions

  1. In a large mixing bowl, take maida and add ajwain, salt and oil.
  2. Mix it well to make a crumbled mixture.
  3.  Now by adding water, knead it into a stiff dough.
  4. Heat oil in a pan.add cumin seeds.
  5. Add mashed potatoes, masala powders and green chillies.
  6. For shaping the samosa, make a 5 inch diameter circle with some dough and cut it into 2 halves.
  7. Now take one semi circle and join two corners of straight line to form a cone.
  8. Place a tablespoon of stuffing in the cone and apply water at the edges to seal it.
  9. Fry these beauties and serve hot with green chutney and tamarind chutney.
