Beetroot Pachadi

Ingredients to make Beetroot Pachadi

  • 1 Big beetroot
  • 1 Medium onion
  • Small piece ginger
  • 2 Green chillies
  • 2 cup Yoghurt
  • Salt as per taste
  • Oil as required
  • Curry leaves a few
  • Mustard seeds 1 tsp

How to make Beetroot Pachadi

  1. Peel the beetroot and grate it. In a pan heat oil put mustard seeds. When it starts spluttering, add chopped onions, green chillies, curry leaves and chopped ginger. Saute well and add the grated beetroot.
  2. Add salt and mix well and cook till the beetroot is soft. Turn off the flame and let it sit for 5 minutes.
  3. Now beat the yogurt in a blender or whisk it with a fork and pour it to the cooked beetroot. Mix well and if it is too thick add a little water.
  4. Serve with plain rice.
